Unlike most Arabica coffees, for natural, or dry-processed, coffees, the coffee cherries are not soaked in water, the cherries are naturally dried off of the bean. This process creates a slightly wild, or earthy, flavor.
This Red Catui variety of Maui Coffee carries strong consistency in the cup for brightness and body. Red Cat has often been described as the cabernet of coffees. This is a special, rare coffee.
